Pork Chops with Scalloped Potatoes

Ingredients

For the pork chops:

  • 4 bone-in pork chops (about ¾-inch thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the scalloped potatoes:

  • 4 large russet potatoes, thinly sliced
  • 1 small onion, finely chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme (optional)

Instructions

  1. Preheat Oven
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Scalloped Potatoes
    • In a saucepan, melt the butter over medium heat. Add the chopped onion and sauté until soft (about 2 minutes).
    • Stir in the flour and cook for 1 minute, stirring constantly.
    • Slowly whisk in the milk, stirring until smooth. Bring to a simmer and cook until thickened (about 3–4 minutes).
    • Remove from heat and stir in the shredded cheddar cheese, salt, pepper, paprika, and thyme (if using).
  3. Assemble the Dish
    • Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over them. Repeat with the remaining potatoes and sauce.
  4. Prepare the Pork Chops
    • Season the pork chops with salt, pepper, garlic powder, and onion powder.
    • Heat olive oil and butter in a skillet over medium-high heat. Sear the pork chops for 2–3 minutes on each side until golden brown (they don’t need to be fully cooked).
  5. Bake
    • Place the seared pork chops on top of the scalloped potatoes. Cover with foil and bake for 45 minutes.
    • Remove the foil and bake for another 15 minutes until the potatoes are tender and the pork chops are cooked through (internal temperature should reach 145°F or 63°C).
  6. Rest & Serve
    • Let the dish rest for 5–10 minutes before serving. Garnish with fresh parsley if desired.
