Beef Gravy
Ingredients:
- 2 tablespoons beef drippings (or butter)
- 2 tablespoons all-purpose flour
- 2 cups beef broth (preferably low-sodium and warm)
- Salt, to taste (start with ½ teaspoon)
- Black pepper, to taste
- Optional: 1 teaspoon Worcestershire sauce (for extra depth)
Instructions:
- Make the roux:
In a skillet or saucepan, melt beef drippings or butter over medium heat. Add the flour and whisk constantly for about 2–3 minutes until the mixture becomes a medium brown roux (darker than for chicken or white gravy). - Add the broth:
Slowly pour in the warm beef broth while whisking vigorously to prevent lumps. - Simmer and thicken:
Bring the gravy to a gentle boil, then reduce heat and simmer for about 5–10 minutes until thickened. - Season:
Stir in salt and plenty of freshly ground black pepper. Add Worcestershire sauce for a richer flavor, if desired. - Strain (optional):
For an extra smooth gravy, strain it through a fine mesh sieve before serving.
Tips:
Add a splash of red wine or balsamic vinegar for a gourmet twist.
Add sautéed onions or mushrooms for extra flavor and texture.
Use pan drippings from a roast for a more intense beefy taste.
