Broccoli Cheddar Chicken Rollups
Ingredients (Serves 4):
- 4 boneless, skinless chicken breasts
- 1 ½ cups broccoli florets, finely chopped or steamed
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil (for cooking)
- Toothpicks or kitchen twine (to secure rollups)
Optional Toppings/Sauces:
- Extra shredded cheddar for topping
- Alfredo sauce or ranch dressing for serving
Instructions:
- Prepare the Chicken:
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to about ¼-inch thickness. Be careful not to tear the meat.
- Make the Filling:
- In a bowl, mix the chopped broccoli, shredded cheddar, cream cheese, garlic powder, onion powder, paprika, salt, and pepper until well combined.
- Assemble the Rollups:
- Lay the flattened chicken breasts on a clean surface. Divide the broccoli-cheddar mixture evenly among the chicken breasts, spreading it in the center.
- Carefully roll up each chicken breast, tucking in the sides as you go. Secure with toothpicks or kitchen twine to hold the shape.
- Cook the Rollups:
- Heat olive oil in a large skillet over medium heat. Place the chicken rollups seam-side down in the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- If desired, sprinkle extra shredded cheddar on top during the last minute of cooking and cover the skillet to let it melt.
- Serve:
- Remove the toothpicks or twine before serving. Slice the rollups into rounds or serve whole.
- Pair with a side of Alfredo sauce, ranch dressing, or your favorite dipping sauce. Serve with rice, mashed potatoes, or a fresh salad.
