Butternut Squash Sausage Soup

Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small butternut squash (peeled, seeded, and cubed)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes (optional)
- 2 cups kale or spinach (chopped)
- Salt & black pepper to taste
- 1 tbsp olive oil
Instructions
- Brown the Sausage – In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon. Remove and set aside.
- Sauté Aromatics – In the same pot, add the diced onion and cook until soft (about 3-4 minutes). Stir in garlic and cook for another 30 seconds.
- Add Squash & Broth – Add butternut squash, chicken broth, thyme, paprika, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, until the squash is tender.
- Blend (Optional) – For a creamier soup, use an immersion blender to partially blend the squash, leaving some chunks for texture.
- Add Sausage & Greens – Return the sausage to the pot and stir in the kale or spinach. Let cook for 2-3 minutes until the greens are wilted.
- Finish with Cream – Stir in the heavy cream, adjust seasoning if needed, and let simmer for 2 more minutes.
