Chicken Gravy
Ingredients:
- 2 tablespoons butter (or chicken drippings)
- 2 tablespoons all-purpose flour
- 2 cups chicken broth (preferably warm and low-sodium)
- Salt, to taste (start with ½ teaspoon)
- Black pepper, to taste
- Optional: 1–2 tablespoons cream or milk (for extra richness)
Instructions:
- Make the roux:
In a saucepan over medium heat, melt butter or use chicken drippings from a roasted or pan-fried chicken. Add the flour and whisk constantly for 1–2 minutes, until it turns light golden. - Add broth:
Slowly pour in the warm chicken broth while whisking constantly to avoid lumps. Bring to a gentle simmer. - Thicken:
Continue cooking and whisking for 5–7 minutes, or until the gravy thickens to your desired consistency. - Season and finish:
Add salt and pepper to taste. For a creamier texture, stir in a splash of milk or cream at the end (optional). - Serve warm over chicken, mashed potatoes, or biscuits.
Optional Add-Ins:
- A pinch of garlic or onion powder for deeper flavor.
- Fresh herbs like thyme or parsley.
- A few drops of soy sauce or Worcestershire for umami depth.
