Crispy Fried Calamari

Ingredients:

  • 1 lb (450g) calamari (squid), cleaned and cut into rings
  • 1 cup buttermilk (or milk with 1 tsp lemon juice) – optional, for tenderizing
  • 1 cup all-purpose flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Oil for frying (vegetable, canola, or peanut oil)
  • Lemon wedges, for serving
  • Marinara or aioli, for dipping

Instructions:

  1. Prep the Calamari (Optional Soak):
    Soak the calamari rings in buttermilk for 30 minutes to 1 hour. This helps tenderize and flavor them.
  2. Mix the Coating:
    In a bowl, combine flour, cornstarch, paprika, garlic powder, salt, and pepper.
  3. Heat the Oil:
    In a deep pan or fryer, heat oil to 350°F (175°C).
  4. Coat the Calamari:
    Remove calamari from buttermilk (if used), shake off excess, and dredge in the flour mixture until fully coated.
  5. Fry in Batches:
    Fry a few pieces at a time (don’t overcrowd) for about 1.5 to 2 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.
  6. Serve Immediately:
    Sprinkle with a little extra salt, serve with lemon wedges and your favorite dipping sauce.
