- 1 lb (450g) calamari (squid), cleaned and cut into rings

- 1 tsp paprika
- ½ tsp garlic powder

- Oil for frying (vegetable, canola, or peanut oil)
- Lemon wedges, for serving
- Marinara or aioli, for dipping
Instructions:
- Prep the Calamari (Optional Soak):
Soak the calamari rings in buttermilk for 30 minutes to 1 hour. This helps tenderize and flavor them. - Mix the Coating:
In a bowl, combine flour, cornstarch, paprika, garlic powder, salt, and pepper. - Heat the Oil:
In a deep pan or fryer, heat oil to 350°F (175°C). - Coat the Calamari:
Remove calamari from buttermilk (if used), shake off excess, and dredge in the flour mixture until fully coated. - Fry in Batches:
Fry a few pieces at a time (don’t overcrowd) for about 1.5 to 2 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels. - Serve Immediately:
Sprinkle with a little extra salt, serve with lemon wedges and your favorite dipping sauce.
