Crust & Crumble
- 2½ cups all-purpose flour
- 1 cup granulated sugar
- ½ tsp salt
- 1 cup unsalted butter, melted
- 1 tsp vanilla extract
Lemon Filling
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- ½ cup fresh lemon juice
- 1 tbsp lemon zest

Step 1: Prep
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
Step 2: Make Crust
In a bowl, mix flour, sugar, and salt. Stir in melted butter and vanilla until crumbly.
Press two-thirds of mixture firmly into prepared pan to form crust.
Step 3: Prepare Filling
Whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
Step 4: Assemble
Pour lemon filling over crust. Sprinkle remaining crumb mixture evenly on top.
Step 5: Bake
Bake 25–30 minutes until top is lightly golden and filling is set.
Cool completely, then refrigerate at least 2 hours before slicing.
