🧾 Ingredients
Steak
- 1½ lbs flank steak or sirloin
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp oregano
- ½ tsp paprika
- Salt & pepper to taste
Bowl Base
- 3 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup Kalamata olives, sliced
- ½ cup crumbled feta cheese
- ¼ cup red onion, thinly sliced
Tzatziki Sauce
- 1 cup Greek yogurt
- ½ cucumber, grated & drained
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt to taste

Step 1: Marinate Steak
Mix olive oil, garlic, oregano, paprika, salt, and pepper. Rub over steak and marinate 20–30 minutes (or up to overnight).
Step 2: Cook Steak
Grill or pan-sear steak over medium-high heat 4–5 minutes per side (medium-rare to medium). Rest 5 minutes, then slice thinly.
Step 3: Make Tzatziki
Stir together all sauce ingredients until smooth. Chill until ready to use.
Step 4: Assemble Bowls
