🧾 Ingredients

  • 12 oz smoked sausage or andouille, sliced
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • ½ onion, diced
  • 3 cloves garlic, minced
  • 2½ cups chicken broth
  • 1 cup heavy cream
  • 12 oz penne or rotini pasta
  • 1½ tbsp Cajun seasoning (adjust to taste)
  • ½ tsp paprika
  • ½ cup grated Parmesan cheese
  • Salt & black pepper to taste
  • Fresh parsley for garnish

👩‍🍳 Instructions

Step 1: Brown Sausage

Heat olive oil in large pot over medium-high heat. Add sausage and cook until browned. Remove and set aside.

Step 2: Sauté Veggies

In same pot, add bell pepper and onion. Cook 3–4 minutes until softened. Stir in garlic.

Step 3: Simmer Pasta

Add broth, cream, pasta, Cajun seasoning, and paprika. Bring to boil, then reduce heat and simmer uncovered 10–12 minutes, stirring often, until pasta is tender and sauce thickens.

Step 4: Finish

Stir sausage back in. Add Parmesan and adjust seasoning. Garnish with parsley and serve hot.

⭐ Tips for Best Flavor

  • Add shrimp or chicken for variation
  • Stir frequently to prevent sticking
  • Finish with squeeze of lemon for brightness
