Pork Chops with Scalloped Potatoes
Ingredients
For the pork chops:
- 4 bone-in pork chops (about ¾-inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon olive oil
- 1 tablespoon butter
For the scalloped potatoes:
- 4 large russet potatoes, thinly sliced
- 1 small onion, finely chopped
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk (whole or 2%)
- 1 cup shredded cheddar cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried thyme (optional)
Instructions
- Preheat Oven
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the Scalloped Potatoes
- In a saucepan, melt the butter over medium heat. Add the chopped onion and sauté until soft (about 2 minutes).
- Stir in the flour and cook for 1 minute, stirring constantly.
- Slowly whisk in the milk, stirring until smooth. Bring to a simmer and cook until thickened (about 3–4 minutes).
- Remove from heat and stir in the shredded cheddar cheese, salt, pepper, paprika, and thyme (if using).
- Assemble the Dish
- Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over them. Repeat with the remaining potatoes and sauce.
- Prepare the Pork Chops
- Season the pork chops with salt, pepper, garlic powder, and onion powder.
- Heat olive oil and butter in a skillet over medium-high heat. Sear the pork chops for 2–3 minutes on each side until golden brown (they don’t need to be fully cooked).
- Bake
- Place the seared pork chops on top of the scalloped potatoes. Cover with foil and bake for 45 minutes.
- Remove the foil and bake for another 15 minutes until the potatoes are tender and the pork chops are cooked through (internal temperature should reach 145°F or 63°C).
- Rest & Serve
- Let the dish rest for 5–10 minutes before serving. Garnish with fresh parsley if desired.
