Ingredients

  • 4 salmon fillets
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 zucchini (sliced)
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning
  • Salt & pepper
  • Lemon slices (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli, zucchini, and tomatoes with olive oil, garlic, salt, pepper, and Italian seasoning.
  3. Spread veggies on a sheet pan.
  4. Place salmon in the center and drizzle with lemon juice and a little more olive oil.
  5. Bake 12–15 minutes, until salmon flakes easily.
  6. Garnish with fresh lemon slices and parsley.

Ingredients

  • 3 medium zucchinis (spiralized)
  • 1 ripe avocado
  • 1 cup fresh basil
  • 1 clove garlic
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • ¼ cup parmesan (optional)
  • Salt & pepper
  • Cherry tomatoes (optional topping)

Instructions

  1. Blend avocado, basil, garlic, lemon juice, olive oil, parmesan, salt, and pepper until smooth.
